Role of bioactive compounds in improving food quality and consumer health outcomes
Abstract
Bioactive compounds are naturally occurring constituents of foods that provide health benefits beyond basic nutrition and have gained significant attention due to their potential role in improving food quality and promoting positive consumer health outcomes. These compounds, including polyphenols, flavonoids, carotenoids, bioactive peptides, dietary fibers, phytosterols, and omega-3 fatty acids, are derived from plant, animal, and microbial sources. They contribute to enhanced nutritional value, improved shelf life, and better sensory characteristics of food products through their antioxidant, antimicrobial, anti-inflammatory, and functional properties. From a health perspective, bioactive compounds play a vital role in reducing the risk of chronic non-communicable diseases such as cardiovascular disorders, diabetes, obesity, cancer, and neurodegenerative conditions. Their mechanisms of action involve modulation of oxidative stress, regulation of metabolic pathways, improvement of gut microbiota composition, and enhancement of immune function. Increasing consumer demand for functional foods, clean-label products, and natural additives has further accelerated research into the identification, extraction, stabilization, and incorporation of bioactive compounds into food systems, stability during processing, interaction with food matrices, and regulatory compliance limit their widespread application.
